Almond Tuna

Almonds, celery, garlic, vegan mayo, Dijon mustard, lemon juice, salt/pepper, kelp powder

Oh She Glows, Easy Flaked Almond "Tuna" Salad
  • Why do I like it?

I just love this plant based version of tuna salad.  Made with almonds that are soaked overnight, it still has a crunchy texture and taste similar to tuna.  

  • What did I change from the original recipe?

While the original recipe doesn't require removing the skins from the almonds, I found that after soaking they easily came off by squeezing the almonds between my fingers.  I did this because most of the skins fell off while processing and I didn't want the texture of the skins in the "tuna".
